Servilleta soft cheese
Manufacturing process
It’s a typical cheese of the Valencian Community. The Servilleta cheese owes its shape to the cloth that surrounds it during its maturation process (Servilleta literally means “napkin” in Spanish).
The rind is globose and it has rounded edges and radiant striations marked due to the knot of the fabric.
Characteristics
The paste is white, not very elastic but without it being rigid. It has a buttery, smooth and frank taste.
