We make this cheese in the traditional way so that it maintains all its properties and its authentic flavour. During the production process, the cheese is wrapped in a napkin and left to ripen. This process gives the cheese its rounded, grooved shape, due to the pressure created by the knot in the fabric.
Matured for only 25 days, its texture is robust yet not rigid and its flavour is buttery, smooth and decisive.
